Barley is one of the ancient grains that grows all around the world. Our parents and grandparents included barley in their diet, as it is a highly beneficial grain. Due to the widespread production of wheat and rice, barley was a forgotten grain. But now this nutrient rich grain is making a comeback and is no longer a forgotten food. The texture of barley is chewy in nature and is highly rich in fibre, protein, copper, and selenium. Rich in magnesium, barley is an excellent replacement for white rice that promotes heart health. One of the popular dishes that is made using barley is kanji, a summer drink that regulates the body’s temperature. Barley is an incredible grain that has a nutty flavour and can be used in soups, salads, and baking.

How to prepare barley kanji


  • Roast and powder required amount of barley.
  • Cook with little water.
  • Consume with milk and country sugar.

How to prepare barley water


Boil two glasses of water with 1 tablespoon of barley. Add salt to taste and boil for around half an hour. Strain and drink. Flavouring it with lemon juice, honey, and spices like cardamom and fennel seeds can make this drink flavorful.
