HOW COUNTRY SUGAR IS PREPARED

 

At the processing unit, the sugarcane pieces are crushed to extract the juice. The sugarcane juice is then heated and boiled until it thickens and forms a syrup. The syrup is left to cool down and crystallize, resulting in country sugar, or naatu sarkkarai. The crystallized sugar is then carefully separated from any remaining liquid and dried to remove any excess moisture. The extraction of country sugar is done using traditional methods, preserving its natural flavor and texture. Country sugar is powdered to make it easier to incorporate into various recipes.
