Also known as koova podi in Malayalam, koova podi is a starch obtained from the roots of arrowroot. The roots are thoroughly washed and ground well to make a fine paste. This paste is sun-dried and later turned into powder. This grain-free and vegan root vegetable is odourless, but arrowroot powder contains a mild odour when mixed with water. It is popular as a thickening agent in soups, sausages, gravies, and baking. Arrowroot powder has cooling properties, which is why it is consumed during the summer to cool down the body temperature and is also used as a medicine for diarrhoea.
