Puttu is a traditional food made by steaming rice flour in a cylindrical puttu maker. HOW TO USE

 

  • Roast the puttu mix on a low flame for 5 minutes.
  • For 1 cup of pearl millet puttu flour, add salt and 3/4 cup of water in small quantities and mix well so that the water is incorporated into the pearl millet puttu powder.
  • Let the puttu mix rest for 20 minutes.
  • Layer the puttu maker with grated coconut and the puttu mix.
  • Steam cook on a low flame in the puttu maker for 10 minutes or until done.
  • Enjoy the pearl millet puttu with chana or chickpea curry.

 

SWEETER VERSION

 

 

  • Roast 1 cup of pearl millet puttu powder for 5 minutes on a low flame.
  • Transfer to a wide bowl. Add salt, and mix with 3/4 cup water in small quantities so that the water is incorporated into the puttu mix.
  • Add 4 tablespoons of grated coconut. Add 2–3 teaspoons of country sugar or naatuchakkarai.  
  • Increase or decrease the sweetness as per your taste.
  • Steam cook the puttu mix for 10 minutes or until done.
  • Transfer to a plate, mix the pearl millet puttu well, and serve hot.
